The celebrated Copenhagen restaurant Noma will reopen to guests. Its erstwhile head chef, René Redzepi, has handed the reins over to his colleagues and announced a fresh task of his own. The restaurant, which until late boasted 3 Michelin stars, is, in a sense, starting from scratch.
