The city erstwhile associated with sausage and herring is now a paradise for plant-based food lovers. In a sense, it is simply a return to the roots. After all, the cuisine of the Polish peasantry was full of root vegetables, potatoes and another tubers. A plant-based diet was simply the default, not an ideological one.
